Quick freezing creates numerous crystallization centers, yielding small, uniformly distributed ice crystals within cells and intercellular spaces, preserving water naturally present in the product. Blanching prior to freezing inactivates enzymes, maintaining color, flavor, and aroma. Freezing preserves nutritional value and protects sensitive components such as vitamins.
